  1. Three months in, and my twice weekly sourdough baking is still going. Four loaves a week (two for the in-laws). I'm almost through my 2nd 16kg bag of flour. One more to go!

      And, on a more technical note... internal structure is getting better now (airier, good flavour, good crust). However, no matter what I do, I still can't get a good ear. Tried different cutting, overnight proving.
