There a very few things more mildly disappointing than over-proved bread. Honestly, making sourdough is a continual headache. For every good loaf, there are eight mediocre ones, a couple of terrible ones, and several hours of nerding out in obscure bread making forums.

How this is done at an industrial - I mean, even just a local bakery - level is amazing. Hats off to those who make a living out of this.
